When I was pregnant with my first child a few years ago, I followed the Bradley Method and Brewer Diet for Pregnancy. Unfortunately, I did not get a good cookbook to help me along the way. So, when I was to eat two eggs each day, I skipped creativity and ate scrambled eggs with fried potatoes every morning. Every. Morning.
After he was born, I had little desire to eat eggs. It wasn’t until I was pregnant with my second child that I began to revisit the idea of eating eggs, albeit reluctantly. Since then, I have found a few different ways to sneak in eggs without sacrificing variety.
Basic Eggs
Without any frills, eggs are a good addition to many meals. You can put fried eggs on bagel melts and sandwiches, hard-boiled eggs as a side or addition to many summer dishes and scrambled eggs in burritos, veggie scrambles and just about anything else. With about six grams of protein in an egg, they can give you the boost you need, especially when paired with complex carbs and veggies.

Breakfast Burritos
Although the eggs are usually traditional scrambles, breakfast burritos add a variety of ingredients to mix it up a bit. I find a full breakfast burrito to be much heartier than simple scrambled eggs, as well, since you can include so much more food in the meal. Breakfast burritos aren’t just for breakfast, either- they make a great meal at any time of day.
Another positive to breakfast burritos is the time-saving factor. If you are running out the door, you can take breakfast with you. Usually, you can saute the ingredients together in a skillet, push them to the side and add the eggs, making for easy clean up.
Hard-Boiled Eggs
Eggs are not quarantined to breakfast, either. Hard-boiled eggs are a great treat to have in the fridge at any time and can be used in a variety of ways.
Salads are a fantastic lunch in pregnancy, but without protein, they aren’t good as a stand-alone meal. Some sliced hard-boiled eggs will fix you right up and add an extra measure of flavor.
You can also turn them into deviled eggs or egg salad sandwiches. When all else fails, you can get a quick protein jolt from just grabbing a hard-boiled egg for that second (or third) breakfast break.
Remember to cook your eggs fully in pregnancy. As long as the eggs are cooked, you are only limited by your imagination. So step outside of the breakfast box and enjoy nourishing your body and your baby!
